In 1981, Alain Terrier decided to pay homage to this glorious past by creating Ultra Brut, a champagne without dosage. The grapes selected for this wine have a natural acid/sugar balance, so even when fermented to complete dryness no 'liqueur d'exp&amp;eacute;dition' is required. Aged for four years prior to release, this clean, crisp champagne goes particularly well with oysters, caviar and other seafood. &lt;/p&gt;

 &lt;p&gt;Simonsig Kaapse Vonkel Classique Brut 2009 &lt;br /&gt;&lt;br /&gt;Frans Malan, the founder of Simonsig, was the first producer of Methode Champenoise in South Africa when he pioneered Cap Classique in 1971. &lt;br /&gt;This wine has received much praise including at the Bristol Wine and Food Fair where it was received with much enthusiasm. &lt;br /&gt;This blend of Pinot Noir, Chardonnay and Pinot Meunier has a lively and energetic mousse, lovely red berry aromas and a delicious sour dough complexity. Mouthfilling with ample body and persistent clean and dry finish. &lt;br /&gt;&lt;br /&gt;Laforet Bourgogne Blanc, Joseph Drouhin 2009 &lt;br /&gt;&lt;br /&gt;Laforet Bourgogne Chardonnay of Maison Drouhin is made from 100% Chardonnay grapes, handpicked from all over Burgundy. &lt;br /&gt;It derives its bouquet and taste from various &amp;quot;terroirs&amp;quot; mostly Macon for the fruity flavours, although, in certain vintages, its crisp structure may come from Chablis, its body from Rully, Chassagne and Puligny Montrachet and its overall nascent complexity from the young vines of Joseph Drouhin own great &amp;quot;Crus&amp;quot;.&amp;nbsp;&lt;/p&gt;
